Recipe: Vegetarian Rice Pulao

Vegetarian Rice Pulao

Ingredients

  • 2 cups – Basmati Rice
  • 1 –  Red onion
  • 3 tablespoon – Ghee / Oil
  • 1 – Carrots, cut into small cubes
  • 1 – Potato, cut into small cubes
  • 1/2 cup – Peas
  • 1 cup – Cauliflower, cut into small pieces
  • Salt according to taste
  • 1/2 tablespoon – Turmeric powder

Grind to Paste:

  • 1 small piece – Ginger
  • 4-5 – Garlic cloves
  • 1 – Red onion
  • 2-3 – Green chillies
  • 2 – Cinnamon sticks
  • 3 – Cloves
  • 1/4 cup – Mint leaves
  • 2-3 – Cardamoms

Preparation:

  • Soak rice for at least half an hour before cooking.
  • Heat ghee/oil in thick bottomed vessel and fry the ground paste for 7-8 minutes. Add vegetables and mix well.
  • Cook until the masala separates from oil and vegetables get tender and change colour slightly. Add turmeric powder.
  • Add rice, salt, four cups of water and stir well. Cover and cook on slow flame until rice is cooked. Stir once a while .
  • Serve vegetable pulao hot with raita, ghee or chutney
